NUESTRO ACEITE /OUR OLIVE OIL
Los antiguos y los más jóvenes olivos que se encuentran entre nuestros viñedos dieron origen a DOMINGA, un aceite de oliva elaborado bajo los más puros métodos de molienda y centrifugación de la aceituna.
Dominga Boasso fue la esposa y compañera de Roberto Cassone, y madre de Eduardo. Hija también de piamonteses y nacida al igual que Roberto en la localidad de El Trébol, provincia de Santa Fe, Dominga llegó de joven a Mendoza junto a su marido y dos hijas. Aquí nacieron su tercera hija y Eduardo.
Al igual que con los cortes o blends de vinos se logran altos grados de complejidad y riqueza en aromas y sabores, lo mismo sucede con el aceite de oliva. Por ese motivo la familia decidió que nuestro aceite reúna las tres variedades provenientes de importantes regiones productoras en el mundo de olivos: Arauco (Argentina), Manzanilla (España) y Frantoio (Italia).
El corte realizado con estas variedades logra un aceite dotado de frescura, sabor y textura, características ideales para acompañar todo tipo de comidas y vinos.
The ancient as well as the new olive trees that grow among our vineyards gave origin to Dominga, an olive oil elaborated with the purest methods of crushing and centrifuging of the olive.
Dominga Boasso was Roberto Cassone’s wife and partner, mother of Eduardo. Her parents were also from the Piamonte region and she was born in El Trebol, Santa Fe Province. Dominga arrived in Mendoza when she was young with her husband and two daughters. Her third daughter and her son Eduardo were born here in Mendoza.
As with the blends and cuts of the wines you get high levels of complexity, the same happens with the olive oil. This is the reason why the family decided that our olive oil should have the three most important varieties coming from different regions of olive production: Arauco (Argentina), Manzanilla (Spain) and Frantoio (Italy). The cut developed with these varieties gives way to a fresh and tasty olive oil with the ideal characteristics to accompany all kinds of foods and wines.
